It’s February, people. We survived the bitter cold of January. The boys and I even got outside for some pruning and soccer playing this afternoon! Thanksgiving is over, and the Christmas carols are on. It’s officially Christmas around here!

Okay, it actually doesn’t really feel like Christmas to me right now because I’m writing this from a condo in Hawaii listening to the waves lapping against the shore (I know, I’m super spoiled). Still, I know that when I go home to snowy Utah in 3 days, I’m going to get into full celebrate-the-season mode.

I have one main goal for Christmas this year: KEEP IT SIMPLE.

Originally, I was planning to make a peach-blueberry crisp, but then nectarines were on sale for 3 lbs. for a dollar…and who can resist that?

Plus, I actually like nectarines better anyway (the fuzz on peaches kind of makes me shiver). We even have a nectarine tree in our back yard, and I’m thrilled that it is actually producing fruit this year (we just planted it last fall)! And now that I’ve made this dessert, I think I know what some of those nectarines will be used for once they’re ripe.

Sunday night dessert is an institution around here. I’m not sure how it happened, other than that my husband’s sweet tooth requires copious amounts of sugar when we’re home on the weekends. 🙂

It’s one of the few times he steps into the kitchen and cooks, and he gets a lot of enjoyment from looking up dessert recipe ideas. In fact, several years ago I showed him how to “pin” a recipe that he thought looked yummy so we could make it later, and the next time I looked at my account I saw that he had pinned 20 or 30 recipes after that first one! Apparently, I created a monster. At least it’s a monster who creates tasty desserts.

I grew up camping every summer. With five kids, there weren’t a lot of other vacation destinations that were in the budget, but that was fine with me. I loved spending my summers hiking, learning to fish, building sandcastles on the shores of Hume Lake, and exploring the giant tree stumps at Princess Campground.

In fact, my husband laughs at me a little for how nostalgic I get every time we see a tent trailer. But, really, tent trailers are awesome! Am I right? The smell of sun-baked plastic and the scratchy seats. Ahhh…memories.
