I love making sourdough bread, but when life gets busy (ahem, all summer long with kids!), my sourdough starter takes a backseat to the chaos. This summer, my poor starter sat in the fridge like a neglected science experiment for months while I focused on pool days, trips to the park, and trying to keep my three crazy boys from turning the house into a wrestling ring (full disclosure: I failed spectacularly at that last one).

Fast forward to the cooler temps of fall, and I decided it was time to dive back in to bread-making. But after so many months of neglect, my sourdough starter needed some serious TLC in the form of extra feedings to bring it back to life. Extra feedings means lots of sourdough discard…so I started experimenting with something that I may love even more than bread: Sourdough Discard Crackers.

These crackers are to die for.

I’m not kidding—once you make them, you’ll wonder why you ever bothered with bread in the first place. I seriously couldn’t stop myself from sneaking back to the kitchen for another bite…and another…until my kids came home from school and demolished the rest of the pan in less than five minutes.

Okay, in reality, I’m not giving up bread anytime soon, but I am definitely going to be making these crackers on a regular basis from now on.

Why I’m Obsessed

First of all, this is a ridiculously easy recipe. You only need a few simple ingredients, and in less than 5 minutes of mixing, you’ll have your crackers ready to bake. Toss them in the oven, and 30-40 minutes later, you’ll have little crispy bites of heaven!

Second, it’s a perfect for inviting kids into the kitchen to help cook! My boys love getting involved in the kitchen, and this one is foolproof. They can stir up the ingredients, spread it in the pan, and even help sprinkle on the seasonings. And you know they’re going to be lining up to be taste-testers once they come out of the oven.

Since the recipe is super adaptable, you can even let the kids help decide which seasonings to add (yay for giving them ownership in the recipe!). My favorite is to use the “Everything but the Bagel” seasoning from Trader Joes, but you can also use parmesan cheese, Italian seasoning, or just simple salt and pepper.

Ingredients

  • ¾ cup (200 g) discarded sourdough starter (stirred down)
  • 2 tablespoons melted butter
  • ¼ teaspoon sea salt
  • Seasonings to taste (*see note)
  • ¼ teaspoon salt for sprinkling on top

Instructions

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Mix together the sourdough starter, melted butter, sea salt, and seasoning in a bowl until well combined.
  3. Spread the mixture thinly and evenly onto the prepared baking sheet, using a spatula to get it as thin as possible (around 1/8 inch).
  4. Sprinkle the top with the ¼ teaspoon of salt for extra flavor and crunch.
  5. Bake for 10 minutes. Removed pan from oven and use a sharp knife or pizza cutter to score your crackers into 1x1 inch squares (or your preferred size). Return to the oven and bake for an additional 20-30 or until golden brown.
  6. Cool on the pan for a few minutes, then break into pieces and enjoy!

Notes

The seasonings in this recipe are extremely adaptable. My favorite is to use about 1 teaspoon of the "Everything but the Bagel" seasoning from Trader Joes. Mix it into the batter, and then sprinkle a little more on top for good measure.

Alternatively, you can keep things simple with just salt and pepper, or add some parmesan or Italian seasoning. Feel free to experiment!

How to Store Them (If they last that Long)

Store your crackers in an airtight container on the counter, and they should stay crisp for up to a week (although they never last that long in my house!).
